(easy and done in 1 hour)
200 g carrots
300 g flour
200 g sugar
100 g oil (not olive, seeds oil)
100 g milk or yogurt
1 pinch of salt
½ packet of baking powder
1 packet of vanillin sugar
(50 g grinded almonds) optional
Clean the carrots and grate them.
Whisk the 2 eggs (best with an electric whisk), add sugar, than oil, milk, salt, vanillin sugar; mix baking-powder with the flower and than add it to the mixture,(avoiding formation of lumps).
Add the carrots and, if available, the grinded almonds.
Butter a cake tin, pour in the dough and put into 180ºC preheated oven for 40 minutes. Leave the cake in the oven until backed well.
Once taken out of the oven dust with powder sugar.
Ideal for kids in all occasions.
