You need: Chicken, soy sauce, honey, garlic, lemon, dates, vegetables, and an oven.

Buy a whole frozen chicken, let it defrost completely, take all skin and fatty parts off, and divide it in 4 or more pieces.

Prepare a marinade from soy sauce (min. 5 tablespoons), honey (3 tablespoons), 1 piece fine chopped garlic, a piece of fine chopped ginger if available (sometimes at Sheikh Abdallah supermarket), the juice of one lemon, and put the chicken in. Make sure that the marinade is rubbed in all parts of the chicken, cover the bowl, and let it soak for min. 2 hours or overnight.

Cut up lots of vegetables of your choice, the more the better, anything goes (zucchini, bell peppers, carrots, onions, leek, green beans, peas, hot pepper, whatever you like and find…) and put them in an ovenproof pan.
Cut up some dried dates (balah) (not the very dry ones, but the ones, which are still a little bit moist) and mix them with the vegetables . If outside the season to get them at the veggie shop, you can buy them packed i.e. in Nurhan supermarket. (often they are filled with almonds = even better…).
Put the chicken parts and all of the marinade on top of the vegetables.

The whole dish goes in the hot oven for 1 to 1 ½ hours. Turn the chicken after half an hour to get it brown from both sides, and add maybe a little water if needed (depends on the veggies you use…).
If the chicken gets brown too quickly, reduce the heat and cover with aluminum foil.

Serve with rice, preferably Basmati (much less starch than normal rice = less fattening)
